Potvrdili sme na\u0161u odbornos\u0165, profesionalitu na\u0161ich zamestnancov a to, \u017ee z\u00e1kazn\u00edk pre n\u00e1s znamen\u00e1 viac ako zdroj pr\u00edjmu. Od prv\u00fdch mesiacov roka 2020 po\u010das pr\u00edchodu pand\u00e9mie do Eur\u00f3py sme ako firma prijali opatrenia na pomoc slovensk\u00e9mu gastru. V\u0161etky tieto syst\u00e9mov\u00e9 zmeny smerovali na zmiernenie di\u0161tan\u010dn\u00fdch opatren\u00ed prijat\u00fdch vl\u00e1dou. Od za\u010diatku sme pochopili, \u017ee stravovacie n\u00e1vyky na\u0161ich ob\u010danov sa bud\u00fa viac ubera\u0165 k rozvozu jed\u00e1l a k v\u00fddaju z okienka. Ve\u010f nakoniec na\u0161a firma skoro dek\u00e1du svojej p\u00f4sobnosti sa venuje segmentu obalov pre rozvoz jed\u00e1l a toto bola od za\u010diatku pre n\u00e1s ve\u013ek\u00e1 profesion\u00e1lna v\u00fdzva.<\/p>\n\n\n\n<p><strong>Ako ste sa sna\u017eili pom\u00f4c\u0165 re\u0161taur\u00e1ci\u00e1m a prev\u00e1dzkam spolo\u010dn\u00e9ho stravovania?<\/strong><\/p>\n\n\n\n<p>&#8211; Na\u0161a firma je jedin\u00fdm slovensk\u00fdm v\u00fdrobcom baliacich strojov pod vlastnou zna\u010dkou MenuPACK\u00ae a v\u010faka tomu sme u\u017e po\u010das prvej vlny pomohli mnoh\u00fdm prev\u00e1dzkam \u00faspe\u0161ne pokra\u010dova\u0165 aspo\u0148 v obmedzenom re\u017eime v\u00fddaja stravy v obaloch. Po sk\u00fasenostiach z prvej vlny sme sa d\u00f4kladne pripravili na mo\u017enos\u0165 \u010fal\u0161ieho soci\u00e1lneho di\u0161tancu pre stravovacie prev\u00e1dzky a pripravili sme syst\u00e9m z\u00e1sobovania a dostato\u010dn\u00e9 z\u00e1soby bezpe\u010dn\u00fdch hermeticky uzatvoren\u00fdch obalov na rozvoz stravy. Okam\u017eite sme zn\u00ed\u017eili ceny strojov na balenie jed\u00e1l a obalov pre nov\u00fdch z\u00e1kazn\u00edkov a vytvorili sme obchodn\u00fd t\u00edm pre individu\u00e1lne posudzovanie pomoci na\u0161im z\u00e1kazn\u00edkom. Zru\u0161ili sme po\u0161tovn\u00e9 a tak dok\u00e1\u017eeme s najlep\u0161\u00edmi cenami obalov a bezplatn\u00fdm po\u0161tovn\u00fdm do 24 hod\u00edn dopravi\u0165 na\u0161e obaly k z\u00e1kazn\u00edkom. Z\u00e1rove\u0148 sme zriadili n\u00fadzov\u00fd bezplatn\u00fd servis na\u0161ich baliacich strojov. Takisto sme obmedzili predaj strojov do zahrani\u010dia, aby sme vytvorili dostato\u010dn\u00e9 z\u00e1soby pre na\u0161ich klientov a to hlavne pre in\u0161tit\u00facie ako s\u00fa nemocnice, \u0161koly, domovy seniorov a \u010fal\u0161ie. Ve\u013eakr\u00e1t sa n\u00e1m stalo, \u017ee sme museli tieto stroje in\u0161tit\u00faci\u00e1m aj po\u017ei\u010diava\u0165.<\/p>\n\n\n\n<p><strong>Zatvoren\u00e9 stravovacie zariadenia presunuli pod\u00e1vanie potrav\u00edn do jednorazov\u00fdch boxov. \u010co by mohli prev\u00e1dzkovatelia robi\u0165 efekt\u00edvnej\u0161ie, aby dok\u00e1zali rozdistribuova\u0165 viac jed\u00e1l?<\/strong><br><br>&#8211; Odpove\u010f spo\u010d\u00edva na trhu dod\u00e1vania potrav\u00edn a jed\u00e1l online. Rozvoz jed\u00e1l online na Slovensku vzr\u00e1stol za posledn\u00fdch 5 rokov o 40 % a tento trend neust\u00e1le st\u00fapa. Pand\u00e9mia ur\u00fdchlila absorpciu a prv\u00fdkr\u00e1t priniesla nov\u00e9 publikum a nov\u00e9 demografick\u00e9 \u00fadaje. A \u010do sa dozved\u00e1me je to, \u017ee ka\u017ed\u00e1 komer\u010dn\u00e1 kuchy\u0148a m\u00e1 potenci\u00e1l dosiahnu\u0165 \u00faspech v segmente rozvozu jed\u00e1l s minim\u00e1lnymi \u010fal\u0161\u00edmi n\u00e1kladmi. S pomocou nov\u00fdch technol\u00f3gi\u00ed a tr\u00e9ningov\u00fdch procesov je mo\u017en\u00e9 \u013eahko a r\u00fdchlo reorganizova\u0165 aj tie kuchyne, ktor\u00e9 jedlo nerozv\u00e1\u017eali, aby popri svojej miestnej kuchyni pon\u00fakali aj jedlo na extern\u00e9 dodanie. Zamestnanci kuchyne, ktor\u00ed by za norm\u00e1lnych okolnost\u00ed mali pripravova\u0165 jedl\u00e1 pre turistov a host\u00ed, m\u00f4\u017eu tento \u010das str\u00e1vi\u0165 pr\u00edpravou objedn\u00e1vok na doru\u010denie rozvozom. Drah\u00e9 a v\u017edy pou\u017eite\u013en\u00e9 kuchynsk\u00e9 vybavenie sa d\u00e1 ove\u013ea lep\u0161ie vyu\u017ei\u0165. Bez \u010fal\u0161\u00edch po\u010diato\u010dn\u00fdch invest\u00edci\u00ed existuje \u010fal\u0161\u00ed zdroj v\u00fdnosov, ktor\u00fd \u010dak\u00e1 na vyu\u017eitie. Samozrejme, ak chce gastro-prev\u00e1dzka zv\u00fd\u0161i\u0165 svoj v\u00fdtlak rozvozu jed\u00e1l, je potrebn\u00e9 pou\u017e\u00edva\u0165 najlep\u0161ie vlastn\u00e9 webov\u00e9 objedn\u00e1vkov\u00e9 aplik\u00e1cie, alebo port\u00e1ly na objedn\u00e1vanie jed\u00e1l. Mali by aj ich kuchyne prem\u00fd\u0161\u013ea\u0165 o spusten\u00ed rozvozu varen\u00e9ho jedla?<\/strong><\/p>\n\n\n\n<p>&#8211; Toto je kritick\u00fd okamih pre hotelov\u00fd priemysel. Slab\u00e1, alebo \u017eiadna podpora \u0161t\u00e1tu na pomoc cestovn\u00e9mu ruchu signalizuje, \u017ee treba sa spo\u013eahn\u00fa\u0165 rad\u0161ej na vlastn\u00e9 sily a modern\u00e9 inov\u00e1cie. Povinnos\u0165ou vlastn\u00edkov hotelov je urobi\u0165 v\u0161etko, \u010do je v ich sil\u00e1ch, aby zlep\u0161ili efekt\u00edvnos\u0165 a na\u0161li v tejto zlo\u017eitej chv\u00edli nov\u00e9 sp\u00f4soby generovania v\u00fdnosov. Je to odv\u00e1\u017eny krok, ktor\u00fd by v\u0161ak mohol predstavova\u0165 \u017eivotne d\u00f4le\u017eit\u00e9 z\u00e1chrann\u00e9 lano pre hotelov\u00e9 re\u0161taur\u00e1cie, ktor\u00e9 st\u00e1le \u010delia bud\u00facnosti obmedzen\u00fdch rezerv\u00e1ci\u00ed, ob\u00e1v o bezpe\u010dnos\u0165 zdravia a soci\u00e1lneho di\u0161tancu.<\/p>\n\n\n\n<p><strong>Balenie jedla v re\u0161taur\u00e1ci\u00e1ch prin\u00e1\u0161a podstatne vy\u0161\u0161iu z\u00e1\u0165a\u017e na \u017eivotn\u00e9 prostredie. Maj\u00fa podnikatelia z\u00e1ujem bali\u0165 hotov\u00e9 jedl\u00e1 do ekologick\u00fdch obalov?<\/strong><\/p>\n\n\n\n<p>&#8211; Od 1.1.2022 eur\u00f3pska komisia zak\u00e1zala viacer\u00e9 plastov\u00e9 obaly, ale hlavne EPS menuboxy, taniere a \u010fal\u0161ie obaly. My sme pripravili alternat\u00edvny projekt v\u00fdmeny t\u00fdchto obalov za ekologick\u00e9 recyklovate\u013en\u00e9 misky z PP, alebo obaly z buni\u010diny a z odpadu z cukrovej trstiny. Na\u0161a firma tie\u017e \u00faspe\u0161ne vyr\u00e1ba stroje&nbsp;<a href=\"https:\/\/www.zatavovaciemisky.sk\/\" target=\"_blank\" rel=\"noreferrer noopener\">MenuPACK Eco<\/a>. A pre\u010do Eco? M\u00e1 to dvojit\u00fd v\u00fdznam, eco ako ekonomick\u00fd, preto\u017ee sme sa sna\u017eili vyrobi\u0165 stroj za cenu, ktor\u00fa si m\u00f4\u017ee dovoli\u0165 u\u017e naozaj ka\u017ed\u00fd a takisto pri re\u017eime, kedy sa na stroji nepracuje, si stroj berie len 1\/6 energie pracovn\u00e9ho v\u00fdkonu. A eco aj ako ekologick\u00fd, preto\u017ee tento stroj pon\u00fakame s na\u0161im ekologick\u00fdm programom&nbsp;<a href=\"https:\/\/biook.eu\/sk\/\" target=\"_blank\" rel=\"noreferrer noopener\">BioOK<\/a>, kde sme spolo\u010dne s na\u0161imi partnermi pripravili pre n\u00e1\u0161 trh 100 % kompostovate\u013en\u00e9 misky a f\u00f3liu, ktor\u00e9 sa rozlo\u017eia aj v dom\u00e1com prostred\u00ed. Tak\u017ee ur\u010dite na\u0161i podnikatelia v stravovan\u00ed maj\u00fa z\u00e1ujem o&nbsp;<a href=\"https:\/\/www.menubox.sk\/www\/\" target=\"_blank\" rel=\"noreferrer noopener\">nov\u00e9 ekologick\u00e9 obaly<\/a>. A aj ke\u010f pand\u00e9mia tento trend na chv\u00ed\u013eu spomalila, na\u0161a firma aj na\u010falej vyv\u00edja nov\u00e9 kompostovateln\u00e9 misky a f\u00f3lie, preto\u017ee bud\u00facnos\u0165 patr\u00ed nov\u00fdm ekologick\u00fdm materi\u00e1lom.<br><br><strong>Ak\u00e9 s\u00fa limity eko-balen\u00ed?<\/strong><\/p>\n\n\n\n<p>&#8211; Tak\u00fdm najzn\u00e1mej\u0161\u00edm limitom ekologick\u00e9ho balenia je to, \u010di naozaj je vhodnou alternat\u00edvou k svojmu plastov\u00e9mu predchodcovi, \u010di sp\u013a\u0148a rovnak\u00e9 potreby a kvalitu pre balenie tovaru. Preto\u017ee to, \u010do sa teraz deje na trhu E\u00da by som prirovnal k h\u013eadaniu spr\u00e1vneho ekologick\u00e9ho materi\u00e1lu pre balenie jed\u00e1l a potrav\u00edn. M\u00e1me tu ve\u013ea nov\u00fdch materi\u00e1lov z \u00c1zie, ale prinajmen\u0161om je diskutabiln\u00e9, ke\u010f tie obaly privezieme cez pol zemegule, \u010di sme tejto plan\u00e9te naozaj pomohli. A v takomto pr\u00edpade, je naozaj recyklovate\u013en\u00fd polypropyl\u00e9n vhodnej\u0161\u00ed a ekologickej\u0161\u00ed material ako ak\u00e1ko\u013evek pseudo ekologick\u00e1 n\u00e1hrada, ktorej doprava vytvorila neskuto\u010dne ve\u013ek\u00fa uhl\u00edkov\u00fa stopu. Tak\u017ee v\u0161etko by sme mali robi\u0165 s mierou, aj ekol\u00f3giu, preto\u017ee, mus\u00edme si prizna\u0165, \u017ee zatia\u013e \u013eudstvo nepozn\u00e1 roz\u0161\u00edrenej\u0161\u00ed a \u013eah\u0161ie z\u00edskate\u013en\u00fd materi\u00e1l na obaly, ako je plast.<br><br><strong>S\u00fa niektor\u00e9 typy obalov, kde sa bez plastu nezaob\u00eddeme?<\/strong><\/p>\n\n\n\n<p>&#8211; Ale my sa naozaj bez plastov nezaob\u00eddeme, dnes m\u00e1me plast v\u0161ade okolo seba, je v po\u010d\u00edta\u010di na ktorom p\u00ed\u0161em, m\u00e1m ho v okuliaroch, v stoli\u010dke na ktorej sed\u00edm, plast je v\u0161ade. D\u00f4le\u017eit\u00e9 je plast separova\u0165 a recyklova\u0165, ale to je u\u017e o n\u00e1s \u013eu\u010foch, zato plast nem\u00f4\u017ee. Samozrejme, \u017ee v dne\u0161nej dobe u\u017e m\u00e1me r\u00f4zne ekologick\u00e9 alternat\u00edvy plastov a \u00faspe\u0161ne sa pou\u017e\u00edvaj\u00fa. \u010co sa t\u00fdka segmentu gastron\u00f3mie, objavili si r\u00f4zne alternat\u00edvy z papiera, PLA, z odpadu cukrovej trstiny, buni\u010diny a mnoho \u010fal\u0161\u00edch ako s\u00fa napr. otruby, slamky z jablkov\u00fdch \u0161upiek, alebo p\u0161eni\u010dn\u00e9 slamky, pr\u00edbory z bambusu, misky z kokosov\u00fdch orechov, je toho dnes mnoho. A \u010di s\u00fa niektor\u00e9 typy obalov, kde sa bez plastu nezaob\u00eddeme? Nemysl\u00edm si, preto\u017ee ka\u017ed\u00fd plast sa d\u00e1 nahradi\u0165, ide v\u0161ak o to, \u017ee my nedok\u00e1\u017eeme tak\u00e9 mno\u017estvo nahradi\u0165.<br><br><strong>Ako ste sa dostali k tomu, \u017ee ste kedysi za\u010dali vyr\u00e1ba\u0165 vlastn\u00fd baliaci stroj?<\/strong><\/p>\n\n\n\n<p>&#8211; Samozrejme bolo to z nedostatku tak\u00fdchto strojov vo v\u00fdchodnej Eur\u00f3pe. Nako\u013eko tento rok kon\u010dia najzn\u00e1mej\u0161ie obaly na jedlo, EPS menuboxy, nahradia ich ako najlacnej\u0161ia a najlep\u0161ia alternat\u00edva misky z PP, ktor\u00fdm sa na\u0161a firma venuje vy\u0161e 7 rokov. Samozrejme, \u017ee tieto misky je mo\u017en\u00e9 zakry\u0165 aj vie\u010dkom, ale nie je to ten najbezpe\u010dnej\u0161\u00ed a najlacnej\u0161\u00ed variant pre jedlo. T\u00fdm je uzavretie misky z polypropyl\u00e9nu s takisto recyklovate\u013enou f\u00f3liou a to tepeln\u00fdm zataven\u00edm na\u0161imi strojmi. Tak ako sa n\u00e1\u0161 biznis s obalmi a strojmi rozv\u00edjal, sme narazili na probl\u00e9m, \u017ee n\u00e1\u0161 zahrani\u010dn\u00fd v\u00fdrobca u\u017e nesta\u010dil pokr\u00fdva\u0165 v\u00fdrobou n\u00e1\u0161 dopyt. A \u010falej v tom, \u017ee si v\u0161etko vyv\u00edjame sami, od prvotn\u00e9ho n\u00e1kresu, cez technick\u00fa dokument\u00e1ciu, prototyp, a\u017e po fin\u00e1lny produkt. Za\u010d\u00ednali sme s jedin\u00fdm typom stroja, dnes u\u017e dok\u00e1\u017eeme vyrobi\u0165 aj zlo\u017eitej\u0161ie stroje, ako poloautomaty, automaty a na papieri sa pripravuje prv\u00e1 vlastn\u00e1 linka na balenie obedov\u00e9ho menu. V\u010faka tomu sme vymysleli ve\u013ea vlastn\u00fdch inov\u00e1ci\u00ed na\u0161ich strojov, \u010do \u00faspe\u0161ne vyu\u017e\u00edvaj\u00fa aj na\u0161i konkurenti a to hlavne v Po\u013esku a v \u00c1zii. Tomu sa v\u0161ak v dne\u0161nej r\u00fdchlej dobe zabr\u00e1ni\u0165 ned\u00e1 a tak rad\u0161ej svoje sily zameriavame na nov\u00e9 typy strojov a inov\u00e1cii, ako sa zapodieva\u0165 \u017ealobami a s\u00fadmi.
